Good For You Gummies

This Eat by Design approved recipe includes gelatin which is so good for your health! Also, by using lemon juice and stevia these have no sugar at all. You can also make them using cranberry and sour cherry juice. You can substitute just about any liquid you want. Best part – Kids love them!

3 tbsp. gelatin

1/3 cup lemon/lime juice

3 tbsp raw honey OR 1 tsp liquid stevia

Optional – 1/2 tsp. lemon extract OR

few drops of food grade lemon/orange essential oil.

Special Equipment

Silicone Candy molds / Ice Cube Trays

Pour all ingredients into a sauce pan.

Heat over low heat, stirring constantly until it’s nice and melty and all of the gelatin has dissolved and has no lumps.

Use an silicone ice cube or mold. (You can use a basic pan, too, and then just cut into squares or use a cookie cutter after it’s set.)

Pour the mixture into the molds, then pop in the freezer for 5-10 minutes to firm up. Once they’re out of the freezer they will stay firm at room temperature

For easy removal of the gummy shapes from the mold, submerge just the bottom of the mold in hot water for a few seconds.

Store in the fridge for up to 2 weeks.
